Cooking For #TEAMGB With Aldi

Aldi UK are the official sponsors of Team GB at the Rio Olympics. They invited us to try out one of their new recipes created by a Team GB nutritionist. The recipe is healthy, tasty and a fun one to make with kids in the school holidays!

Instead of a blog post I thought another venture into Vlogging was in order (sorry!). Finley, myself and Auntie Amy (my sister) chose to make Coconut and Blueberry Pancakes…

Ingredients

For the pancake: 1 egg / 1 large banana / 3 tablespoons of Milled Linseed (we used plain flour) / 3 tablespoons of water

1 teaspoon of Coconut Oil for frying

For the topping: plain greek yoghurt / blueberries / honey / desiccated coconut

Method

If using linseed combine with the water and allow to sit in the fridge for 30 minutes.

Mash the banana in a bowl and add the linseed/flour. Add the egg and two tablespoons of coconut and whisk the mixture so its nice and thick.

Heat the coconut oil over a medium heat. Once melted spoon 1/6 of the mixture into the pan. Heat until bubbles form and then flip the pancake and cook for a further minute or two.

Top the pancakes with a spoonful of yoghurt, a few blueberries and a drizzle of honey.

  18. This looks great! And so quick and easy. They’re building a new Aldi near me. I’ve not been shopping there in years and remember being surprised at seeing bags of cement in one of the aisles!   22. I am a massive Aldi convert. If you have time to actually go shopping rather than get it delivered, you can save LOADS of money! I save around £25 a week on the same shop compared to Sainos online! #stayclassymama
